Black Pepper Pork Chop using Range Mate Magic Cooker

From FROZEN to Lunch in 11mins! Serious... No Joke!!! =)

Just need to coat a thin layer of butter on the range mate magic cooker, place the pork chop flat on the coated pan. Throw in some cut vegetable. Spoon over half a bottle of black pepper sauce. Microwave using 50% power for 5 mins on each side of pork. DONE

Bacon-Wrapped Chicken Tenders

Saw this super easy dish on MarthaSteward.com and I tried doing that for dinner. ~NICE~ ^.^
But I didn't fry them in a pan.  I cooked them using my Range Mate Magic Cooker.  Fast and easy. @ 50% power, 5 mins on each side inside my 1000@ microwave.  So Simple!!! :D

I used carrot and zucchini stix to replace those "leaves" :D

I realised I prepared too much stix... so I coated them with egg, bread crumbs and Nestum Cereal and shredded cheddar cheese.  Bake @ 220 d.c. for 45mins... and made the left-over stix into yummy & healthy snacks for all at home  ;-)

Tessa was running a temperature that afternoon... No appetite :( so i cooked this simple dish for her... Glad that she ate all ;-)

Had dinner at Mr Teh Tarik, Khatib branch.

The Sambal is kind of Tooooooo Much =)) But shiok lah!!! Btw, the Black Pepper version also sama-sama :D

Candified Cookies

Experimenting new recipe without SUGAR... Just Flour, butter and mashmallow.

1 batch with added Chocolate chips
1 batch with added Skittles

The POWER of mashmallow is so SWEET!! =) The "Candified" Air is lingering in my Kitchen ;-)

very much like sticky soft cookies with hints of mashmallow taste as you chew =))
Tessa love it and wants to eat all!!! :D
Wonder how will Nyx react when she comes back from school ;-)
Ingredients
350g all Plain flour
1 tsp baking soda
1 block 250g Butter
1 egg, lightly beaten
1/2 tbsp vanilla extract
1 cup Quakers Instant oatmeal
1 cup marshmallow bits (i bought a S$4.00 - 200g pack from mini toons)
1/4 cup chocolate chips
1 small pack skittles
Method:
Sift Flour and Baking soda, Add vanilla extract to beaten egg
Rub-in Flour, egg, butter, egg till u it become dough form
Add in oatmeal and mashmallow and chocolate chips. Continue to knead and make sure all sweets R stucked to the cookie dough.
Cling Wrap and Chill overnight.
Preheat oven to 180d.c.
Prepare mini cupcake liners or Line Baking tray with baking sheet.
Roll cookie dough into tiny balls of about 2cm diameter.
Place the balls into cuppies or lay them on baking tray.
Top each ball with 1 Skittles droplet (if u wish) I just used some for picture-taking purposes :P
Bake for 15mins. Make sure they r completely cooled before storing in air-tight containers.

Creamy Corn & Chicken Soup over Spiral Pasta

Similar to my Salmon Cream Corn Soup... Just change the salmon dice to Diced Chicken Tigh meat.

Marinate 200g Diced Chicken tigh meat with 1tbsp light soya sauce and 1 tsp sugar for at least 1hr. Coat with corn flour before cooking.

Pre-cook the Buttered Brocolli.

Cook Pasta, set aside.

Boil the cream corn, chix stock and set aside.

In a saucepan, heat up a laddle of soup, add in the diced chicken meat and cook them by stiring lightly in the pan. When meat is cooked, add in the rest of soup and let it bubble for a min or so.

Drain Pasta and place on a plate. Spead a few brocolli on pasta and pour over soup. Serve =))

Buttered Cereal Prawns + Squid aka 牛油麦片虾+Sotong

I love to eat Sotong! I love cereal too... so I created this ;-) Please lor! I didn't use Premix ok?!! This is very easy to make! Seriously!

Watch this video 1st and you'll believe me.
Ingredients & Method
12 Big Prawns, de-shelled, washed, head and "sai" all removed :P
1 Medium size sotong, washed and cut into rings
1 pinch of salt
1 egg, beaten
2 tbsp Oil
--> Marinate the prawns and sotong with salt - set aside
--> Heat Oil in a frying pan.
--> Coat Prawn and Sotong with egg
--> Fry till cooked and set aside

100g Nestum Cereal
1 tbsp icing sugar
2 tbsp milk powder (i replaced with creamer coz i dun have milk powder at home :P )
--> Mix everything together

25g Butter
10 curry leaves
--> Melt butter in frying pan at low heat, add in curry leaves and fry till fragrant.
--> Add in Cereal Mixture and stir-fry slowly till all the butter is absorbed by the cereal.
--> Add in the Cooked Seafood and coat them evenly with the buttered cereal. DONE!
But hor, I got lots of cereal left!!
Lucky Tessa love the cereal and ate half of the left-0ver :D Next time I'll just go with 50g cereal ba ;-)

Sweet Creamed Corn Muffin aka Jagong Muffin

repeated bake :D Think I did this Sweet Creamed Corn Muffin last month... My 1st few attempts after my long bake-break.

Saw my bake-pal, evelyn posted her Jagong Muffin.... I replied, telling her I wanna make them again ;-) Nyx saw my reply to Eve on FB and she said "YES"!!! with that smile on her face =))

I added Oatmeal to my recipe this time... for a more filling breakfast munch ;-)

180g Self Raising Flour
1 tbsp Vanilla favoured Custard Powder
4 tbsp Quakers Instant Oatmeal
(sift flour and custard powder together. Mix in oatmeal)
120g Unsalted Butter
100g Sugar
2 eggs
1 tsp Vanilla essence
4 tbsp Cream Corn (those from can)

Preheat oven @ 180 degress celcius
Mix at highest speed, butter, sugar and egg+ vanilla essence for 10 mins
Add in cream corn and mix for about 1 minute
Fold in the flour mixture
I pour the cake mixture into a piping bag and fill up each cup till 3/4 full.
Lastly, top each cup mixture with 1 or 2 tsp scoop of cream corn (I think i topped with 1 tbsp this time )

Bake for 20 minutes. Switch to top heat and bake for further 5 mins.

Cool in pan for at least 10mins before taking them out of the muffin pan.

Make sure the muffins r completely cooled before u store them in a air-tight container. Before I serve, I will reheat in microwave for 8 seconds. Enjoy!

Salmon Creamy Corn Soup

Made this simple soup for lunch using the left over Creamed Corn from the Jagong Muffins.

Ingredients
2 cans cans creamed corn
500ml chicken stock
2 tsp cornstarch
2 tsp cold water
some Brocolli or any greens you like
300g Salmon fillet, de-skin, de-boned, cut into small cubes.

Method:
In a medium saucepan, combine the creamed corn with chicken stock and bring to a gentle boil.
In a small bowl, stir together cornstarch and cold water until smooth. Add to the soup. Cook for another few minutes, stirring often, until slightly thicken.
(I pre-cooked my Brocolli, steaming them in salt solution & butter.)
Stir in the vege and salmon cubes and let the soup bubble for a minute or so just before serving.
My girls eat this with brown rice... and they love it!! =))

Steamed Salmon on Buttered Asparagus

Reason why I'm cooking this fish all the time coz Salmon is Nyx's favorite! This is a very easy and fast to prepare dish. ;-)


Method:
De-skin and wash the salmon fillet
Marinate with 1 tsp light soya sauce, 1 tsp sugar + some water
Cover well and chill for at least 1hr
Steam for 10 mins.

Wash and cut off the thicker ends of the asparagus. Cut to your desired length. Prepare in a corning ware salt solution with 100ml water + a pinch of salt.
Put the cut asparagus in. scrape some butter and spread a few "scrape" over on the asparagus.
Sprinkle a little brown sugar over the butter. (throw in some mushroom if u want)
I use microwave to steam for 3mins, covered.

When fish is done, take out and place on top of the asparagus. Done! ;-)

Note:
I steam the veg. and fish seperately. Please dun prepare the fish too early ahead. coz salmon tends to harden when cooled. Prepare fish just b4 makan time.
I steam the Asparagus n mircowave for 3mins, covered. If you are using the normal steamer, it might teake longer time.
