I'm a Henghua. My great grand-dad came to singapore long ago from Putien, China. That makes me the 3rd generation Singaporean Henghua :D. but sorry, I can't speak the language coz no one speaks Henghua in sg anymore. I can still understand what it meant if I hear anyone speaks it ;-) but I can only respond in mandarin. hahaa...

Henghua eats this dish for every occasion. Since this is CNY season, we r eating it every other day lor :D

my mum will prepare lots of 好料 to go with the henghua mee suah.... the usual Henghua way! ;-)

Wobbly Tau Huay 滑滑的豆花

I made this Tau Huay last nite b4 I go to bed for today's Breakfast ;-)

I Love Tau Huay since I was a child. But as I grew older, I'm sticking to Mr Bean's Bean Curd for its unique and strong scent of 豆味. Those Pasat stall Tau Huay cannot make it anymore :P Although the famous Rochor Rd Tau Huay is very smooth in texture but they dun have that 豆的味道 :( anyway, I'm missing the very thick and creammy, unsweetened Soy Milk drink from Courtyard Times Square @ Seoul, Korea. I'll never find its replacement :(

Actually I didn't have the intention to make Tau Huay at all. I bought a pack of Unisoy Soy Milk instant drink from Fairprice last week, hoping to "smell" some 豆味 from the drink... Yes! there is indeed some 豆味 in this drink :D but its too sweet for my liking :( (btw, I'm someone who dislike sweet-tasting stuff :P) And I found this "secret recipe"within the package :D so I did some experiment b4 I slept last nite :D hehee...

Here's the "Secret Recipe" :D

I doubled the recipe... so I used 4 sachets of the Instant Powder.

+ 12g gelatine powder

+ 800g warm water

Stir-in everything well. (I used a whisk to do so)

Pour into bowls/cups/moulds as u wish

Cover well

Leave on tabletop to cool-off for 5-10mins

Put into Fridge to set overnight

I searched the web for a recipe for the tau huay syrup and came upon Baking Quinn's recipe :D

I love Pandan favor but not ginger... so I omitted the ginger slices for my syrup.

Here's 200g water + 70g honey rock sugar + 2 pandan leaves knotted together

Boil everything mixing everything together. Leave the Pandan leaves in to infuse the Syrup.

This is what I got the next morning when I woke up! :D

Not Bad after all!! The texture is seriously wobbly and smooth! My Tessa finished all within a minute! ;-) So Happy! :D

Another batch of Pineapple Tartz

I made another batch today. and i can't stop snapping pix for them ;-)

Here's how i did them...
Pre-heat oven @160•celcius.

Tart Recipe
250g Plain flour
100g Cake flour
50g Icing sugar
(sieve the above 3 powder together)
250g butter (salted)
(Hard from fridge, cut into 1-2cm cubes)
1 egg yolk

Use rubbing-in method. Rub in everything with finger-tips till it form a dough.
Roll out to 0.5cm thickness. Cut out using any cutter of your choice.
brush the tarts top with egg glaze (see below)

egg glaze
1 egg white
1 teaspoon vanilla essence
1 tiny drop yellow coloring

Place a pineapple ball-ball in the middle of the cut and glazed tart.
Brush the ball-balls with egg glaze.
(As I really have no time to go JB to buy my usual pineapple jam, I used ready-made pineapple jam from Phoon Huat this time round. I pre-roll them into tiny ball-ball few days before to make my life easier =D)

Bake at 160•celcius for 15mins.
Increase to 180•celcius, top heat for further 2-3mins to get that "golden-brown" look ;-)

previous batch recipe was using 350g plain flour. easier to shape and details were clear. but i felt tat the texture is too "biscuit" :( For me, its kind of too hard for tartz... i still prefer tat "melt in your mouth" texture. so i modified this batch with 250g plain flour + 100g cake flour.

the dough is very "melty" in this hot sg weather. need to work really fast! however, the details r not very clear as u can see in the pix. but tat "melt in your mouth" texture is back! yeah! ;-) yummy yummy :D lolz...

This is super easy to make... just bake the cookies and stack them together, using royal icing to keep them in place. Decorate the sides with some royal icing and add some sprinkles and colored sugar balls. TaDa... that's IT!!!

I bought those wilton stars cutters like 2 years back... and finally, i did this tree today! :D Not bad lah, I'm quite satisfied after my super long baking-break ;-)

Bot a SGD4.70 Cheesecake from Giant supermarket. As it looked kind of boring, I decorated it with berries :D It looked so pretty after my decorationz rite? ;-) so I decided to take some pix for it :D

CornFlakes Cookies

I'm feeling kind of lazy after baking 20+gongs of pineapple tartz to share with close frens.... I tot I lost my baking-energy to bake more CNY stuff. Yesterday afternoon I walked to my opposite block's bakery shop with intension to buy some cornflakes cookies but they r selling @ SGD13.00 for a small container!!! I put the containers back to the shop shelf and came back home to bake my own. Here's it.... after 2 hrs of preparation, baking, packing and washing... 3 gongs of Cornflakes Cookies from my oven. Ingredients cost is less than SGD5.00 ba ;-) and my gong is 50% bigger than the bakery shop de :P

Another year past! And my little Tessa is 5!!!

Made another "hamburger cake" using my rice cooker again ;-)
Everyone is sick of fondant :P so i just use them for the "cut-out"messages.
Eating big chunks of fondant is too unhealthy and yucky!!! So, I'm using DecoPac cake topper again :D at least Tessa can keep it as a toy after she eat the cake ;-)

I love Strawberry Shortcake too since young... I still keep a collection of the mini dolls in the vintage version ;-)

Remembered someone suggested why dun i simply buy a cake from some 5-stars Hotel and I dun need to spend hours messing, whisking and washing in the kitchen baking + decorating???!!!! But I feel that MY cake is far beyond any "HOTEL-standard" kind of cake coz its full of my LOVE for my love ones :D

and it just reminded me of that sweet sweet PINK room @ Budacco Hotel where i stayed last Sept during my Bangkok Shopping Trip.... I want to go back there.... SOON!!!!

PineApple Tartz again

Its the time of the year again... CNY! Pineapple tarts r my fav. snack since young. its a must-have for me every year... but ever since i left seagate in year 2000, i can't find the taste of those very nice tarts my ex-colleage bought for me anymore. even those local hotel de also cannot be compared to those Lily bought from her JB friend who made them @ home. Till 2years ago, a lady from Richard's Baking class gave me this recipe.... Its very similar to those "very nice"tarts Lily bought for me long time ago ;-)

I love my "bite-size"pineapple tart! coz u can put the whole "flower" in your mouth and guest won't be dropping bits of tarts all over my sofa :P save my trouble cleaning up :P and someone was using my THIS idea i told her about last year, claiming that she tot of it!!! ANGRY >:( how could she tot of it and still making tarts double the size of this???

I tried the unsalted version for this trail run... Hubby love them and finished 2 containers in 2 days. He will blame me for his weight gain again!! >:(

Saw SU and the HKG cake shops selling cakes like these... so I copycat and did this for Nyx's Class Party @ Alexis' Place today.

Added some details with fondant & snow powder.... The Kids so cute!! they called it a "Hamburger Cake"!! :D Think I'll be making more Rice Cooker cakes in future!! its fast and clean... think it save a little on my power bills too ba! :D

hi! for those who r not aware, my 2 precious furry babies left me in october. :( sherry left me on 5 oct at the age of 11... and my dear dongdong refused to eat and also left me 3 days later :'( i dunno how much tears i shed and it still hurts me now whenever i tot of them. they were with me since sherry was 5 weeks old, and dongdong was only 6 weeks. they had been part of my life and i'm not quite used to life without them. sherry is not there to wake me up every morning anymore with her smelly paws..... dongdong is not there waiting for my hugs anymore...... worst still, no one is there waiting to sample myBakez anymore..... :( thats y i've not been baking. i miss my 2 fur babies!! very much! :(. baking is not the same anymore without sherry sticking to my feet when i walk around the kitchen.... i miss their sniffy nose.... i miss my sherry and dongdong :(

1st time using Decor-set for my cake ;-) Effect is so GOOD!! save lots of my time molding "cheong" Poohs & friends :P And eating big chunks of fondant is too "Yucky" for Pelyn's family (and me too :P) At least, Jesse can play with the Decor-set as toys after the Party :D

I did the cake like tat only.... Then Put the Decor-set on top and the cake is DONE!! easy 吧?!?!!

I broke my cupcake record.... I made 75 cupcakes for Jesse's 1st BD celebrations ;-) 1st time using Decor-Picks for my cuppies :D it really made cake-decor FAST, EASY and NICE ;-)

Confession : Actually I'm not confident molding the Pooh and Friends figurines out of fondant lah :P also, I dun have enuff time molding 75 figurines.... so I sorted to this method.... effect? I think I like... :D but I'm seriously very tired!! Started doing on Thursday. Completed on Saturday morning, 3am.... zzzzzz Glad that Pelyn & all like my cakes :D

1st [FAILED] attempt on Dairy Whipping Cream

This is my 1st (FAILED) attempt using Dairy Whipping cream :P and wasted SGD 6.80 :( all thrown inside dustbin :P

I've only been using Pride & Rich's Brand of Non-Dairy Whipping Cream. But it wasn't available @ Fairprice... so my Ice-Cream making partner bought this EMBORG brand to try... but hor, why it turn out "curdy-curdy" one? feel so bad :( throw away her $$ :P In the end, I went back home to get my Rich's brand from my freezer.... then the creammy, creammy, swee swee, yummy yummy ice-cream done and put to set in her freezer liao. But I never take foto coz go to go out with family liao... :D

Nyx's 7th Birthday Cake (3) ~ Cup Cakes ~

I made 2 batches of cuppies...
Vanilla Cupcakes with Chocolate Crisco Cream
Chocolate Chip Cupcakes with Vanilla Crisco Cream

Toppers r all flavoured Candy Melts molded with Wilton candy making technique ;-)

Transparent Plastic tube containers I found @ Phoon Huat @ SGD0.30 each.
I stickied the sweet-coloured pokka dots ribbons around all the containers last weekend ;-)
Everyone @ Class 1B will bring one of these cuppies home.... No goody-bag :P

BTW: I hate those "goody-bags" my daughters brought home after their classmates' birthday celebrations :P i hate all those "junk-tidbits" packaged inside :P and my poor daughters never have the chance to eat them anyway, as all will be confiscated by ME and all will go inside the dustbin after a while :P This is a "BAD" mummy here :P

My Ah Lao posted this pix on his FB, quoting ~Chess is a piece of Cake~ :D

This is a cake combining my daughter's hobby & mine..... Nyx plays Chess in School... she is in the Junior Chess Club @ Northland Primary School.

Nyx wanted me to make her this Chessboard Cake (aka checkerboard cake) for her Birthday since few months ago... I wasn't sure if I'm able to do it... so I spent a few days browsing websites about this kind of cake. At first I tot it was easy... just need to buy candy mould can oredi... :D

Doing this cake take me many evenings to melt those chocolate... Its actually easier than molding fondant figurines.... but chocolate-melting is a messy task :P I dunno how much paper hand towel r wasted and every nite I have to bleach those kitchen hand towels as all r stained by my chocolate :D

I used chocolate compound for the "black" pieces as its much easier to melt & harden compared to high-cocoa content chocolate.... anyway, kids just love the "sweetness" not the % of cocoa content :P

Actually, I know nuts about chess game.... I dun even know how to display the chess pieces... so I got to get my daughter to be my adviser :P

These white pieces r melted with white chocolate compound.... very SWEET!!

I'm so satisfied with this cake.... everyone in school was like "WOW!! U MEAN THIS IS A CAKE & U MADE IT???" heheheee.... my lips swinging from left to right :D

Nyx's 7th Birthday Cake (1) ~Strawberry Charlotte~

How time flies.... My baby Nyx is 7!! It's my 2nd time baking her personalised BD cake! This is Cake No.1... for celebrations with cousins @ Ah-Ma's House. She wanted a Heart-Shape Cake with Finger Sponge fencing around the cake so I can tie a nice ribbon with "Happy Birthday" wordings around the cake, making it look like a present ;-) Inside the cake, of coz, its her favourite Vanilla sponge cake sandwiched with layers of strawberry slices with whipped cream....

Nice ribbon with "Happy Birthday" wordings and nice "7" candle I found in JB last week.

Mini Fondant wordings cut-outs using my new FMM cutters.

I bake this cake using the Heart-shape cake tin from LH aka Fatmum. She bought it for me from her Batam Holiday trip few months back... see, my Baking-pal so nice to me ;-)

Here's the last slice of the cake... and its Nyx's 2nd!! I'm surprised the whole cake was gone! This is the 1st time we finish up the whole cake so far wor ;-)

Oreo Chocolate Kisses Loaf Cake

Oh!! I miss my cakes so much!! I have not been reporting to my cake blog since the start of the June School Holiday.... seriously, I was enjoying this June School Holiday with my 2 girls to the ultimate :D We went out almost everyday for the past month and I have not bake anything till today :P

This is a simple to make, easy to decorate & nice to eat cake ;-) best of all, me and my gals love it to bits :D
**Minus point for this cake** ~ remember to brush your teeth after eating this.... else u'll look as if u have tooth decay :P heheeee :D

Ingredients & Method
Sponge Cake (makes 2 Loaf cakes of Tin Size: 20cm x 7cm x 7cm)

I used Optima flour for this sponge cake... usually I will measure 220g of the optima flour, then I'll sieve it at least 3 times to filter out the sugar... as the premix is often far too sweet for my taste-bud :P as for the excess sugar?? I throw them away :P

Using a electric mixer, mix 180g Optima Flour, 3 eggs and 25g water @ highest speed for about 8-10mins. Turn to lowest speed, mix in 25g melted butter. Line Cake Tin with baking paper, pour batter in & bake @ 180 for 25-30 mins.

Turn out the cooked cake on cooling rack, gently peel off the baking paper. Allow cake to cool on rack for at least 20mins, put inside freezer for 30-45mins. Cut the loaf cake into 3 slices.

Whipped Cream
Using Electric mixer, beat 250g of whipping cream @ medium speed for about 8-10 mins till u get a soft peak effect on the beater.

Spread the whipped cream on slice No. 1, topped with chocolate kisses, chips, rice or even oreo crumbs (watever u like ;-)) Stack on top slice No. 2 and repeat procedure.... then stack slice No. 3, spread a thicker layer of whipped cream on top and also the 4 sides of the cake.

Using hand or food processor, crush about 30 oreo cookies into crumbs or bits texture (up to your preference)

Shower the creamed cake with the oreo crumbs till its all covered up.... put the cake back to the fridge to set for at least 2hrs before serving....

Chocolate Fudge Cake for Paul's 9th Birthday

I made this for Paul's 9th Birthday.

Its a 4-layers Chocolate Fudge Cake sandwiched with Valrhona 70% dark chocolate ganache.

Its covered with Chocolate Fondant, topped with 13 mini fudge-balls stuffed inside mini candy foil cups. I topped them with a sheet of white fondant, making them looked like mini-cupcakes.

All the colourful "HAPPY 9th BIRTHDAY PAUL" are fondant cut-outs.

I had lot of fun making this colourful Birthday cake for Paul... and I'm glad the family like it ;-)

Cherry Swiss Roll

Had another attempt of Cake Rolling :D

This time the skin came off a little. And as advised by many, I'm less greedy this time... I spread a thinner layer of whipped cream.

Funny thing is everyone at home prefer my previous swiss roll! That TOOOOOO Creammmy Blueberry roll wor :D

So my girls prefer blueberry filling rather than this cherry filling... and they prefer it with MORE cream! So, no more anything CHERRY in mybakez from now on :P

Vol Au Vent with Lemon Cream

I was browsing FoodGawker again ... and guess what? I had craving for those many-many layers puffy Vol Au Vent pastry :P And I remember I have some frozen cases in my freezer and I made these.... really fast! everything is done within 20mins or so.... :D

Thaw those frozen cases on table top while u Preheat oven @ 220°c... then bake for 7mins, take out of oven and brush the top with some egg wash. Then put them back to bake for another 5-6mins. When done, leave them to cool on table-top....

Then u prepare the Lemon filling... I use the 2mins Jell-O solution :D

Add the whole pack of Jell-O powder with 300ml of milk and mix for 2mins using a electric mixer @ high speed.

Lightly Dust the Baked Puff-ed cases with some snow powder. Then fill the hollow with some Jello Lemon cream.... and they r DONE!!

But I feel that my fussy Nyx will not be satisfied with just THAT!! so I added some cherry topping :D And I've got this can of Cherry Pie filling in my baking cabinet for sometime oredi... I better use them b4 they expire (again):P

The Effect is kind of 画蛇添足to me:P BUT Nyx might like them this way... KIDS!! they just like colourful stuff!! dun they??? ;-)

Cherry Vol Au Vent with Lemon Cream

Picasa can only allow me to blog few pix at a time.... so I put this in another post.... Haha... it seems like I have lots of postings :P anyway, These Cherries added some colours to my Lemon Cream Vol Au Vents... I Think they now look more appetizing for my fussy Nyx ;-)

And I'm glad she said they looked very nice and she want to eat them after her shower :D I'm glad!!! Okie.... I'm going to prepare her dessert now!

Creammy Blueberry Roll ~My 1st Swiss Roll Attempt~ ;-)

Actually I did my 1st Swiss Roll during my Secondary School's Home Econs lessons... and I never succeed :P everytime, my sponge just break when I roll :( so I told myself I never want to roll any cake anymore :P

I'm addicted to Rachel Allen's Bake on Discovery Travel and Living Channel.... Saw her teaching @ her baking school this yummy Swiss Roll... it looked so simple and I just wanna make it ;-)

Rachel Allen's Recipe & method

Whisk 4 eggs and 125g or caster sugar @ high speed for 5-7mins till u get a pale and fluffy texture
add in 1 tsp of vanilla extract and 2 tbsp warm water... whisk for another min.
Sift in 125g of plain flour and fold in to the egg mixture using a spectular.

On a Swiss roll tray, line with baking paper. Lightly brush the sides with Oil and dust with plain flour. Then shake off the excess flour from the tray.

Empty the batter on the Swiss roll tray, spreading gently. Bake @ 190°c for 12-15mins.

After u take the baked sponge out of the oven, lightly press down the sides, sticking to the tray, to release the cake.
Turn out quickly on a big piece of baking paper, dusted with icing sugar. Peel off the baking paper from the sponge cake carefully.
Take a dammed clean tea towel and cover the cake to prevent drying out and also to cool off the cake.

Spread a generous layer of your favourite jam on the sponge cake, follow by another layer of whipped cream ~then ROLL ~:D

I think my cake look kind of ugly :P but being my 1st attempt after 20+yrs of "cake rolling phobia"... I think I got out of that phobia and will be rolling more cakes in my future baking adventure ;-)

and just like what Rachel Allen said.... there is no butter in this cake.... no fat! so u can feel guilt-free splurging lots of non-diary whipped cream in this cake :D and I think I really had too much whipped cream in my cake this time :D hahaa....

Happy Mother's Day with Vegan Cuppies & Vegan Buttercream

I borrowed this wonderful vegan book from NLB last week and I'm glad I tried out its recipes today ;-) Actually these vegan cupcakes dun really taste like those cakes I usually bake.... they taste more like kueh than cake :D anyway, they dun taste bad.... just different. I feel that they r kind of too sweet for my blend taste bud... will reduce the sugar half its called potion next time.

Ingredients for Vegan Cupcakes (the book says makes 12 but I get only 7!)

Preheat oven @ 180°c and line muffin tray with cupcake liners

· 1 cup soy milk (plain, unsweetened)
· 1 tsp apple cider vinegar
· Whisk the above together and leave to curdle for 5mins

· 1 ¼ cup plain flour
· 2 tbsp corn starch
· ¾ tsp baking powder
· ½ tsp baking soda
· ½ tsp salt
· Sift all the above together

· 1/3 cup canola oil ( I use corn oil)
· ¾ cup granulated sugar
· 2 tsp vanilla extract

· Beat the soy milk mixture and the above for a few mins till the sugar dissolved
· Slowly, beat in the flour mixture till u get a smooth texture batter.
· Fill cupcake lines 2/3 full and bake for 20 mins. Or till cake tester come out clean

Ingredients for Vegan Buttercream

· ½ cup margarine (I use daisy brand)
· ½ cup shortening (I use Crisco- plain)
· 3 ½ cups icing sugar, sifted ( 1 reduced to 2 cups)
· 1 ½ tsp vanilla extract
· ¼ cup soy milk or soy creamer

· Beat margarine and shortening together till well combined and fluffy. Add in the sugar and beat for about 3 mins. Add the vanilla and soy milk and beat for further 5-7mins till u get a fluffy texture.

DECORATE!! :D

Happy Cookies for the long weekend

It's Labour Day today.... and school will be closed on next Monday too :( Its long weekends here in Singapore... meaning my 2 girls will be home to make me crazy in the next 3 days :(

Think these cookies will keep them busy munching for some time :D

They look kinda pretty with these Strawberry chocolate kisses + hundreds & thousands color balls....

The r just the same old butter cookies... but the girls just love them so much!!

Butter Cookies

250g Fairprice Brand butter
1 egg
120g sugar
350g Plain Flour
1 tsp baking soda
1 tsp vanillin powder

Cream the wet ingredients using electric mixer till fluffy. Combine the dry ingredients to the creamed, wet ingredients until just blended

Wrap the above dough with cling wrap and refrigerate for half an hour.

Preheat oven to 180°c. and Roll out dough to about 0.5cm thickness, cut out to your desired shape, using cookie cutters. Decorate with whatever toppings u like... I'm using Strawberry Chocolate kisses + hundreds & thousands color balls for this batch of cookies

Bake on ungreased baking sheet for 15mins

Remove from oven and leave on tray to cool for at least 5mins before transferring them to the cooling rack. Make sure cookies are completely cooled before keeping them in air-tight container for storage.

Above ingredients makes 1-1/2 jars of cookiezz... sorry, I forgot to count the actual number again :D

Btw, u dun have to use up all the cookie dough at one shot... u can keep the balance, cling wrapped tightly in the fridge for up to a week... and my teacher even say can keep in freezer for up to 3 mths!!! but i have not tried to do so yet :P

Quiche again... and Portuguese Egg Tart

Yesterday, Tessa told me she wanted to have Quiche for her dinner... and she wanted "Happy Face" Quiche... so I decorated the quiche with these pineapple rings.... and we had funny faces quiche for dinner last nite ;-)

Its Hawaiian Quiche again by the way...

and I have quite a bit of the shortcrust pastry left after I'm done with the 3 Quiches... so I used up the balance for some sweet pastries.... Portuguese Egg Tart, but using shortcrust instead of puff pastry ;-)

Portuguese Egg Tart Filling

4 egg yolks
150ml Cream
150ml Milk
3tbsp condensed milk
Beat everything together till u get a smooth texture.
Strain thru a strainer before pouring in pastry shell

Egg wash

1 egg yolk, 1 tsp honey, 1 drop yellow coloring, 3 drops vanilla extract.

Bake @ 180°c for 15 minutes. Take out, brush with egg wash and put it back to the oven to bake for another 10 minutes or till u get the browning op top.

Another Strawberry Cheesecake

Find me boring? I just made another Strawberry Cheesecake! This time I topped the cheesecake with agar-agar over the sliced strawberries.

Thanks to the Korean Strawberry season... think Cold Storage is over-stocked with strawberries coz they r selling 4 punnets for only SGD 9.99 ;-)

and I found this FAT-FREE cream cheese @ cold storage.... and I told myself, MUST BUY MUST BUY!! :D

Also from Cold Storage... No Frills Brand Marie biscuits for the cheesecake base. FairPrice Butter from my fridge.... My fridge is always well-stocked with FairPrice Butter! Cheap & Nice!

Again, the SQ's 7 o'clock way of presenting a slice of my cheesecake :P

Recipe & Instruction

Cheesecake Base

150g Marie Biscuit, crushed using blender
60g Butter
Melt butter in a frying pan, add in biscuit crumbs... make sure every bit of the crumbs r moistened with the melted butter.
Press the above with a metal spoon, hard onto a remove-able bottom cake mould.
Chill in fridge for 20mins

Cheesecake Filling

250g Cream Cheese (Thaw on table-top for 1hr)
250g Whipping Cream
50g Sugar
100g Condensed Milk
250g Korean Strawberries (grass & stocks removed, blended)
1 tbsp gelatine powder, dissolved in 3 tbsp of water
Whip the whipping cream till soft peak, put it back to the fridge to prevent melting
Cream the cream cheese till smooth, add in sugar, condensed milk till u get a smooth texture
Add in the crushed strawberries
Add in the Whipped cream
Add in gelatine mixture
Pour onto the chilled cake base and leave to set at least 4hrs or overnight in fridge.

Topping

3g Agar Agar powder (colourless)
300 ml water
50g sugar
Dissolve all the above in a pot, bring it to a boiling point, off the heat. Whisk the mixture for a while to cool off before pouring on the set cheesecake.
Slice 10 strawberries and place the neatly on the set cheesecake.
VERY SLOWLY, pour the agar-agar mixture on the cheesecake, make sure all the strawberries slices are covered.
Put it back to the Fridge to set for at least 3hrs.

Northland Primary School's 22nd Anniversary

I made another variation of Strawberry Cheesecake for my fussy Nyx. I asked her to come and take a look of the dessert for tonite.... When she see the above, she said, HAR?? so Plain?? why isn't there any decoration on the cake at all???!!!??? I was disheartened to hear this sentence from my BRAT!!!!!!!! X(

so after sending her to school, I took a bus to Northpoint Cold Storage to buy some Korean Strawberries (Nyx's favourite) to DECORATE that PLAIN-looking cheesecake :(

这样可以吃了吧？女儿？？？

I told the econ-minimart auntie downstairs about what my brat commented about my cheesecake this morning.... She said "well, actually its good to have some FEEDBACK sometimes" ok.... no choice, i just have to 认命lor :( haizzzzz...........

Recipe & Instruction

Cheesecake Base

Hawaiian Quiche

Was watching Rachel Allen's Baked on Discovery Travel & Living and I got craving for that Quiche Lorraine she was making....

so I made my Quiche in my Hawaiian Version, with Rachel Allen's method. (sorry Richard :P)
My 2 daughters & me ate 2 Quiches for dinner last nite ;-)
Here's Quiche No.2.
And Quiche No. 3 in Daiso's Baking Dish

Recipe & Method

Shortcrust Pastry

200g Plain Flour
100g Butter, cubed
pinch of salt
Rub in all the above
whisk 1 egg, add in half to above, rub in again
then add in the other half and rub again till u get a crumbly texture
put the dough in between 2 sheets of cling wrap, press it hard to achieve a flat-sheet about 5mm thickness. chill in fridge on a metal plate for 20-30mins
Bake the pastry @ 180°c on a pie dish with removable base with beans for 20mins.
Remove beans and bake for further 5mins.

Filling

4 eggs (2 whole and 2 yolks)
250ml cream (i use Bulla brand, thickened cream)
175g bacon, cut and fried with 1 tbsp of olive oil
200g cheddar cheese, grated (i mix red and white cheddar)
1 can of sliced pineapple (cut into small chunks)

Place the bacon, pineapple chunks and grated cheese into the baked pastry shell
Whisk the eggs and cream together, pour into the pie dish.

Bake @ 180°c for 45-50mins.

It was my hubby's BD and I remembered he received a complimentary Marriott Hotel Pastry Shop voucher from Citibank.... we have no idea at all why the bank sent us this voucher at all :D anyway, since I have no time to bake him a cake... I might as well redeem some HOTEL CAKES for my DH.

Best thing is that the Hotel staff also have no idea where this redemption came about... they were overwhelmed by the sudden group of people coming to their counter with the cake voucher I had in my hand :D anyway, I got myself 4 slices of cake & a fruit tart....

Tessa kept requesting for pancake whenever we walk pass any supermarket shelves with pre-mix packages like this.... so I bought his Betty Crocker Pancake Mix from Sheng Siong last week. and u know what... its only SGD1.95!!

The instruction is just so simple.... u just need 200ml water to be mix with whatever in the package, spoon the mixture on a skillet to cook and that's it!

Then I slice up a banana and drizzle some Hershey's chocolate sauce on them..... yummy! That's our simple, cheap & easy breakfast for today ;-) and everyone is happy :D

Mango Agar Agar

My Nyx is in the afternoon session... meaning I have limited time to bake and decorate.... so I was telling everyone now I CHILL........... :D Still with cakes...cakes...cakes.... filled in my brain... even my Chilled agar-agar also look like cake :D heheee..... This Mango Agar is inspired by Cherry Potato I saw her posting the other day and I told myself I must make this!!! and I did ;-)

And I made some Mango Agar-Agar cuppies too ;-)

Here comes the instruction

For the bottom layer

1 pack Yogurt Drink
1 pack agar agar powder (no color)
2 tbsp sugar
put everything in a pot, whisk everything together and bring them to a boiling point. Off the heat and pour the mixture in a mould. Chill in fridge for 30-45mins

For the top layer

fresh from 2 mangoes (i use Thai honey mango) - cut into small cubes
lay them on the semi-chilled agar agar of the bottom layer (above)

1 litre water
1 pack agar agar powder
180g sugar
3-4 Pandan leaves knotted together
Bring everything to a boiling point, off the heat, remove the pandan leave and pour the mixture slowly on the bottom layer laid with mango cubes.
Put it back to the fridge to set for at least 4hrs.
Done!! ;-)

This is a nice & yummy dessert!! And its quick and easy too!!! Thanks Cherry Potato for sharing ;-)

Strawberry Kulfi

And here's my 2nd Kulfi attempt from yesterday's mistake :D I did this yummy dessert with the correct ingredients called for....

half a pack of frozen strawberries (SGD3.00)
1 can of evaporated milk (SGD1.55)
2 tbsp caster sugar (almost free)
put everything to buzz for about 1 minute in the blender... then freeze for at least 4hrs.

decorate (almost free too :P)

and I did some in the "lollipop style" with this flower-shape ice-cube mould from Ikea, with a lollipop stick popped into the centre after it froze for about an hour....

its definitely PRICELESS to see my girls enjoying this yummy Strawberry Kulfi :-)

Kulfi ~Instant Ice-Cream, the Indian way~

This Kulfi is very nice!! My girls love it so much and they each finished 2 cups after their dinner and wanted more.......... But somehow, I feel that the texture is just NOT right.... I dunno what went wrong and I just realised while putting this up here, I actually got the ingredients TOTALLY WRONG!!! =P

Frankly, I was so attracted to this Glittering Raspberry Kulfi by Delicious Delicious Delicious. I had never heard of Kulfi before... I dun even know how to pronounce it:P so I did a google search of what it was. This Instant Ice-Cream making instruction seems so easy and I so much wanted to make them for my girls' dessert tonight :D

I remembered I bought a blender many months ago.... maybe more than a year ago to be exact =P and I just opened up the sealed box this morning just becoz I wanna make this Kulfi :D heheheeee.....

HHAAAA!! Becoz I used Condensed Milk instead of Evaporated Milk LAH!! X( Lousy Me X(

Mr. P's Instruction:
Buzz in blender 1 can 410g Evaporated Milk, 1 handful of Frozen Fruit + 2 tbsp Caster sugar

Mine:
Buzz in blender 1 can CONDENSED MILK+1 PUNNET OF FRESH STRAWBERRIES

No wonder the texture is not right!!! Becoz I got everything wrong!! :P Forgive me for what I did but the dessert turned out tasting very nice!! At least, my 2 precious princesses love them ;-)

I will re-do the correct version tomorrow ;-) this is seriously Instant, delicious home-made ice-cream :D

I saw the foodcourt at Giant Tampines selling these agar-agar for SGD1.00 a piece!! I remembered I bought them at only 30cents a piece during my secondary school days. So I came back home a did these for my family :D I told my girls, Daddy & I ate agar-agar like these during our "Part-Tor" days :D heehehe....

My 2nd Matcha Tiramisu

Not satisfied with my 1st Matcha Tiramisu..... so I did the 2nd one ;-) This time I didn't dip the savoiardo in the matcha syrup, instead, I lay them neatly in the cake mould 1st, then I brush the matcha syrup lightly on them. (I've learnt how good the "soaking power" of the savoiardo in my previous attempt liao :P)

Ingredients and method same as my 1st Matcha Tiramisu but this time, I've also added 1/2tsp of gelatine powder, dissolved with 1 tbsp of warm water to the curd the filling a little. This made the filling more manageable for me in this hot Singapore weather.

1st time using my Daiso "coffee-art" stencil ;-)

I think they look much better time time ;-) Not sooooo Wet :P

I think I had fallen in love with Matcha :D I love the taste, the smell and the colour..... :D

Agar Agar Dessert

My little Tessa requested for Agar-Agar for dessert tonight... so I did these batch for my gals to snack after Dinner :D Today is the start of this year's Term 1 School Holidays and Nyx will have 1week to stay home with me and the thought of it make my head spin X( TERROR!! I can't stand kids at home with me for more than 24hrs!! 好烦啊!!

My 1st Matcha Tiramisu

I made a Matcha Tiramisu last nite. I sliced it up this morning and was quite disappointed with the result! :( The cake was too dampened with the green tea syrup. That "soaking power" of the Savoiardo must be too good :D I think I will not dip them in green tea syrup in future... instead, I should just brush some syrup lightly on the savoiardo... think that will do ;-)
Anyway, the taste is very nice!! I will make my 2nd attempt on this cake soon ;-)

see, the matcha syrup is oozzzing out!! :( as usual, the left-over filling makes my little Matcha Tiramisu cuppies....

Ingredients

12 Savoiardo Lady's Fingers

Matcha Syrup

1 cup hot water mix with

1tbsp Matcha Powder then set aside to cool, then I add in

1 tbsp of Cointreau

Fillings

125g Mascarpone Cheese

2 tsp Matcha Powder

150g Non-Dairy Whipping cream

2 tbsp Cointreau

Method

Whisk whipping cream till soft peak, set aside.

Whisk mascarpone Cheese till soft, add in matcha powder

Add in half the whipped cream to the softened cheese, mix for a while and add in the remaining half till combined, add in Cointreau and you'll get that filling done.

I dipped the savoiardo in the matcha syrup but I suggest you just brush the syrup lightly on the savoiardo will do and then lay them neatly on the cake mould. Then spread half filling on top. Then lay another layer of savoiardo, then spread the remaining filling on top. Put in the fridge to set overnight.

and that all made a 挺差劲 but 挺好吃的 Matcha Tiramisu Log cake :P

Strawberry CheeseCake

I was really busy this year with my Nyx entering Primary 1 and in the afternoon session. I still have the passion to bake but I'm always running out of time for everything. So I guess, I will be doing lots of chilled cakes or those without much decoration required :(

I bought this pack of Jell-O No Bake Strawberry Cheesecake Dessert some time ago... so I did this last night... ooooooooooooo! this is so easy! just like what was stated on the box, "Quick & Easy, 15 minutes preparation ;-) then I chilled it in the fridge overnight...

New Bake-able Plate from Daiso

I bought these SGD2.00 Bake-able plate from Daiso and was so eager to use them.... So I did these bake rice for my daughter's dinner :D

I fried those overnight white rice left-over from the previous night's dinner with some pasta sauce. And dump in some diced fresh salmon fillet, diced pumpkin, some sliced mushroom and broccoli flower. Then I topped them with a layer of shredded cheddar cheese. Covered in aluminium foil, I bake in the over @ 180°C for 20mins. ~Done~ :D

Dinner is ready with Campbell soup, Cream of Chicken with mushroom :D

Lunch by my Ah-Lao: Bak Kwa Fried Rice

Its a Super hot afternoon today and no one feel like leaving the house. We have a pack of Bak Kwa (BBQ Pork) in our fridge since CNY and my hubby suggested Bak Kwa fried rice for lunch. I always have cooked white rice in my fridge (to feed my dogs)... so I asked him to do the "frying" since he came out with the idea ;-)

Not bad looking rite??? ;-)

Ingredients

(A)

2 eggs (beaten, fried and cut into stripes)

2 slices Bak Kwa (cut into stripes)

(B)

2 bowls overnight Cooked white rice from the fridge

10 medium size prawns (shelled and cut into half, fry till red & curled up)

7 artificial crab sticks (diced)

some brocolli flower (for the color)

(C)

3tbsp chicken stock (ready-made, swonsen brand)

1tsp salt

1 garlic, chopped finely

1tbsp cooking oil (we use corn oil)

Method

Heat up wok, fry the garlic till fragrant, add in Bak Kwa, fry for a while, add in rice then everything from ingredients(B). Add in chicken stock and salt and continue frying for a while more... Dish on a large plate and garnish with fried egg stripes. Done!!

By the way, he really did only the "frying" part. The rest of the work r done by his "maria" ME :D

CornFlakes Cookies for CNY

Ingredients

1 pack biscuit mix from Bakewell

250g Fairprice Brand Butter

1 bowl of crushed Kellogs Brand conflakes, crushed.

Method

Preheat oven @ 180°c

Using electric mixer, mix the biscuit mix and butter till dough form

Using hand, anyhow pinch the cookie dough into small balls & coat them with crushed cornflakes

Place them on baking-paper-lined baking tray and flatten them slightly using your fingers.
Bake @ 180°c for 15mins

Cool on baking tray for at least 5mins before transferring them to cooking rack

Keep in air-tight container when cookies are completely cooled.

Lousy Cake Workshop @ B-I-Y :(

I attended a lousy cake workshop today at B-I-Y :( I signed up for a Topsy Turvy Cake Demonstration class but the instructor was showing us only how to put fondant on 2 cakes then, stack them up to form a tier-cake... I was not satisfied with the demo so I questioned the instructor about how I thought a "Topsy Turvy" cake should look like... then she started slicing the tier-cake here and there and at the end of the class, this is how HER version of "Topsy Turvy" cake looked like!!!! Haiz... wat a waste of time :( B-I-Y standard drop until like this arh!!! Really DISSAPPOINTED!!

OMG... that's the Instructor's version of "Topsy Turvy" cake!! :( so messy!!

I further question her about what I expected to learn from this class... and I even drew her some picture of the shape of cake I tot it should be... then she started flipping the cake here and there and... oh well... like tat oso can teach arh!!! **faintz**
anyway, that class was really total wastage of my time... I think I can get better demonstration from those youtube clips anytime :D luckily I got some nice catch from the retail shop... :D

Brought too much food to the gambling session and we ended up bringing back 4 mini orange cheesecake pie back home for the next day's breakfast :DDun those mini pandan chiffon cake look familiar?? yes... they r from my dear baking-pal, LF aka fatmumbaking ;-)
the pandan chiffon tasted really yummy!!! its so soft.... it melts in your mouth man!! ;-)

my mini cheesecake also not bad lah :P but still feel that it will taste better on its own, without the oranges as the taste of the canned-oranges had kind of over-rided the taste of my chessecake :(

I made this batch of Mandarin Orange CheeseCake Pie for hubby's gambling session @ his ex-colleague's place this afternoon. They r done on ready-made graham biscuit Pie Base, bought @ Cold Storage. Wonder did I peel, de-skin, de-fiber and de-seed the mandarin oranges? No lah :D I use canned mandarin oranges!! Made my life much easier ;-)

Hubby bought me this Pink Harrods apron from T2 b4 his flight on Tuesday... so happy;-)

Another Strawberry Cake for my Mum's 62nd Birthday

I did another Strawberry Cake (again!) Thanks to the Korean Strawberries season & its so loved by everyone in my family :D

I made a strawberry fresh cream cake for mum and decorated it with FONDANT!! I read from many bloggers saying that this is not possible as the fresh cream is too light to take the weight of the fondant... and the moisture from the fresh cream will damage & de-colour the fondant decor...etc... etc...

But I still want some nice "fondant effect" on this cake ;-) so I tried to do the colourful "生日快乐" on a piece of white fondant, then I "paste" it in the centre of the freshcream cake, decorated with a ring of apricot-glazed strawberries around it. Then I did 3 embossed pink colour fondant strips to stick to the side of the cake. The effect is quite neat leh!! ;-)

As this cake need to be refrigerated, I was surprised that the side fondant didn't "melt" at all :D It still stay neat for the whole day, till my mum cut the cake at almost 9pm last night. As for "生日快乐" @ the centre of the cake, it did "melt" a little and I'm glad I did the wordings on a piece of white fondant :D only the white fondant melted nicely into the white fresh cream but the colourful wordings still stay nicely, unmelted :D

My mum turned 62 on 23Jan10. How time flies!

Poor Ah-Mah Celebrating her birthday with my 2 gals only :( I think she missed her son & 2 grandsons who will all be in US for the next 2 years :(

Tessa's Birthday Cake No. 3

This is my 1st mini fondant tier-cake attempt. ~我成功了~:D and I'm so happy that this cake was welcomed by so many "WOWs" from everyone @ Ah-Mah's house :-)

Confession time =P

I bought a pack of "Phoon Huat" Brand fondant and I coloured them pink with intension to cover the bottom layer of the cake. The top layer, I'lll be using my only pack of Wilton brand fondant. By the time I'm ready to cover the "pink" cake, TROUBLE!!! The pink fondant kept breaking up :( I knead and knead, some kept sticking to my fondant mat while the rest simply breaks up into crumps.... I just can't get them into the right texture :( After more then half an hour trying on the fondant, I GAVE UP!! I threw the whole pack into the dustbin X(

So at the very last minute, I colour part of my Wilton Fondant "PINK". Its already almost midnight and I realised I dun have enough fondant to cover the whole of the lower layer cake.. so I cut out 1 pc for the top part and 2 pcs for the side of the cake. It did cover well initially but by the next morning, the side pc start to slide down and as u can see from the picture below, there is a crack and the inside cake is exposed!! so ugly :(

I had only a tiny bit of white fondant left and i HOPE this idea works :D I rolled out 3 stripes of fondant and embossed it a little to make it look like a ribbon, then I stick them on the "crack" to cover-up the exposed area :D heheeheee... heng arh!!! it works!!! :D

And I'm so glad my 1st Fondant Tier-Cake attempt recieved quite a bit of compliments from everyone!

Tessa turns 4 on 15 Jan, Friday. She had her 1st birthday celebration @ school on 14 Jan, Thursday instead coz her teachers were concerned that it will be too rushed for the children to attend the computer lesson which comes straight after the celebration. My Nyx just started her Primary 1 life this week. She is still not very confident to buy canteen food on her own coz she is no good with money although we had been training her for the past 2 years :(

I had in fact baked a container of oatmeal raisin cookies which can last for her whole week. I was surprised to find out after I'm back from a half-day trip to JB on Thursday that the whole container of cookies were GONE!!! all eaten up by my hubby who was working from home that day X-(

So yesterday, I baked this batch of cookies with my daughters' name... so they won't be "stolen" again =P

I felt very guilty every time I steal leaves from my neighbour's mint plant =P ..... so I decided to grow my own mint plant :D I bought this Wild Mint from a plantation @ Bah Soon Bah road, near Yishun where I stay... it cost me only SGD5.00!! and hubby bought the yellow flower plant to accompany my mint :D Hope they'll "grow" under my care =P

My 1st Tiramisu attempt ~ Kahlua Infused Tiramisu ~

I remembered my Italian colleagues brought me to that restaurant in Verona for lunch few years ago and insisted on me trying its "world-best" Tiramisu. I abide of coz... but was amazed by its totally unappetizing & ugly serving presentation =P (it looks like a pile of "lao-sai" spooned onto a plate!!! yaks!) and seriously, I dun have a slight remembrance of how it tasted!!!!! hahaaaa....

Recently there are so many submission on FoodGawker & local bloggers with their very beautiful & neat looking Tiramisu Torte Cake... and I was very attracted to that "slice of cake" by HHB http://happyhomebaking.blogspot.com/2009/11/just-slice-of-cake.html so I tried my 1st Tiramisu attempt :D Hubby and I were quite satisfied with this cake attempt of mine!!

This is a mini Tiramisu attempt done on a 4.5-inches sponge cake. Cake tin with removable base bought from Daiso :D

Ingredients for Coffee Syrup

1 tbsp instant Nescafe Gold blend powder

1/2 cup boiling water

1/2 tbsp sugar

3 tbsp Kahlua Liqueur

Dissolve instant coffee powder & sugar in boiling water. Set aside to cool.

Stir in Kahlua

Ingredients for Tiramisu Filling

120g Cream Cheese

1 tbsp icing sugar

1 tsp vanilla extract

3 tbsp Kahlua Liqueur

5 tbsp Coffee Syrup

120g whipping cream

**(Cocoa powder for dusting, chocolate curls & chocolate coffee beans for decoration)**

Whisk whipping cream till soft peak, set aside.

Whisk cream cheese and icing sugar till combined, add in vanilla extract, Kahlua and coffee syrup. Mix for about 1 minute then add in whipped cream & mix for another 5 mins.

Assembling of Cake

Verdict: This is a nice cake!!! however, I feel that its a little too sweet for me as I'm someone who drinks coffee without sugar. [i prefer kopi-si kosong ;-)] I will omit sugar in the coffee syrup & filling in my future Tiramisu attempt! Yummmmmm.....

Chilled Oreo Cheesecake ~ No Bake again!

No nuts & chocolates had been my baking rules as My little Tessa is nut allergy... meaning Oreo is also a No-No for her.... but she is turning 4yrs old next month.... We just hope that she is just a Childhood Allergy case and will overcome the "nut-problem" as she grows older.

We were advised by doctors to give her bits of nut-stuff to boost-up her war against this allergy thing. She had pieces of Oreo biscuits for the past few months and she seems not having any reaction to it... Lets see if she will break-out with rashes tonite after these cuppies :P

Berri-Berri Pie

~Oh~ Everyone is making Thanks giving Pie on FoodGawker.... Then I remembered those very Expensive Fruitti Pies selling @ Fruits Paradize, Orchard Central 8-[ **faint** I will never pay SGD80.00 for a fruit pie in my life :D unless i strike 5.5million toto all to my own one day :D

So I tried my own version of Fruitti-Berri Pie
...and I made 2 Berri-Berri Pies yesterday

I coated the Shortcrust Pastry Shell with chocolate. Reason: to act as a water-proof coating to prevent the pie filling's moisture from soaking into the pastry shell, making it soggy.

And that's my neighbour's abandoned Mint Plant wittering in the hot Singapore weather. Very often I stole leaves from this plant to decorate myBakez =P

And again, I used Jell-O Instant Vanilla Pudding mix for my Pie filling. Just add 450ml of HL Milk (instead of 600ml of milk for pudding). Mix for 2 minutes using electric mixer and its DONE!! :D simple and I love the taste.

~~and here's a slice of my Berri-Berri Pie.... Shortcrust Pastry Shell, coated with a layer of white chocolate, filled with Jell-O Vanilla Filling, sandwiched with a slice of Vanilla Sponge Cake, Topped with a layer of whipped cream, lots of Korean strawberries and New Zealand Blueberries, coated with a layer of Apricot Glazing~~

Its much easier to make a Pie like this using a loose-bottom pie tin... it makes cutting lots easier. I found these from a Bangkok Bake Shop during my last trip there. Its only 70 Baht each. Will stock-up more of these in all sizes during my next trip there in mid-December ;)

Ben10 Watch again

Was Trying out my fondant on Ben10 Omnitrix watch again! The smaller Omnitrix watch was did by my hubby wor :D He said my cheong Ben10 Watch look weird so he tried his own version... heheee... Not bad rite?? at least I think it looks nice! But hor, my gals preferred my version leh! hahaa....

This lot was given to my Sister-in-law's twins, Jay & Jeff at my in-law's place last Saturday. They took the watches into the room to play and ate all up b4 my sister-in-law took picture of them ;-) luckily I did after they were done at my home b4 bringing them out :D

Surprised the twins preferred my version too!! hahaa... maybe the kids feel that watches should be in "round" shape instead of "square"??? :D

Sorry Keith, I didn't have them fixed on your cakes as I didn't know how to place them on the cuppies... they just look weird... I promised your mum I'll make 1 using clay so u can keep them as a toy.

Ben10 Watch Cupcakez for Keith's 5th Birthday

Initially Keith wanted only the Ben10 Aliens but Auntie Sherynn have no power to create aliens out from my fondant so sorry ;P I can only find this lot of icing images from JB :-)

I did the cheong watches on chocolate fondant as I didn't want the children to eat too much of the black coloring if I were to dye my own fondant.... I think I need to add half a bottle of the "Wilton Black" in order to get the "Black Color" right!!

And I made some Princess Cupcakes for the girls in school as I think they all will be like"ME", not at all interested in "Boy's Toys" :P

Total 49 cupcakes ready to go!! Will be bringing them to school @ 3pm.

I tried a different type of frosting this time. I mixed the Ready-made Cream Cheese icing with Daisy Margerine. Reason: to bring down the "super-sweetness" of the Pillsbury icing. This icing mixture is erm... nice.... :-) and it will stay un-melted without refrigerating, in our super hot & humid Singapore weather for the whole day :D and it kind of bring tone down the "sweetness" of cupcakes. Imagine ~Sweet cupcakes + V.Sweet Fondant + Food Colorings + V.Sweet Butter cream~ the kids will go hyper-active the whole day 8-l **faint**

It had been raining the whole day and i dun even feel like stepping out of my house in this kind of weather. So I spent the whole day browsing net...

I was watching this http://www.youtube.com/watch?v=upb9M8chnoE with my daughters few days ago and they asked me if I will be making any Choux Pastry?? I'll try soon... I promised them. Then I dug this recipe out from vintage Home Economics Recipe Book :D Yes! I still keep this book from my secondary school days... I took Food & Nutrition for my 'O' levels exam almost 20 years ago!!!

I doubled the recipe as I always remembered my teachers were very "ngiow" =P

I omitted the baking powder & replaced margarine with SCS brand butter.

Those days we dun have the privilege of using piping bags for choux puff! We simply scoop some dough with a spoon and dump them on baking trays... tats it!! they still puff up anyway :D

Then I remembered non of us at home fancy the taste of custard fillings... so I tried what the YouTube video suggested ~ Jell-O Pudding filling! Its so simple to make and the taste is so great! I love it a lot :D The Jell-O Vanilla filling tasted very "ice-cream"...they reminded me of those Japanese Cream Puff I used to buy and fly them back all the way from Narita long time ago :-)~

As my little daughter, Tessa is allergic to chocolate, I topped the puffs with strawberry candy melts instead. The Hundreds & Thousands did dress-up my puffs a little ;-)

The little tiny "eclairs" were so Loved by my gals and they requested for more! I made 10 more of those but were snatched-out even b4 I took any picture of them :D even my 2 fur babies had some of the kosong eclairs ;-) just the choux shells! no filling, no melts :-)

I dun have the power of LH to make those 超cute Totoro Puff... but these lot did satisfy that craving which persisted me for the past 24hrs!

Cheong Ben 10 Watch!! by me :D

I've got an order for Nyx's classmate's brother, Keith's birthday on 24Nov for a Ben 10 cake. I agreed to this order as its a just super-simple 30 cupcakes order with Ben10 icing images. So I went Ann's shop, Bakewell @ JB (again :D) to get the ready-made icing images yesterday.

Trying to add some "FUN" to the simple-order, and since I'm quite free today, so I tried making the Ben10 watch using fondant... heheee... since I have 2 girls, I know nuts about boy's toys! so I imitate this from some one's fondant cake pictures published by google images search ;-) so the rightful owner, pls dun sue me for copyright :D

Keith's BD is 2 weeks away... so come back 2 weeks later to see the actual cake lah ;-)

Shopping for my hobby again :P

10 Nov: I was at B-I-Y with intention to buy some lollipop sticks but was unavailable:(

then while browsing the shop, i was so in love with these baking & fondant gadgets so i grab them home :D but then, my buying fever is not yet over.... so yesterday, more buys for my hobby @ JB... although the intention was just to get some ready Ben10 icing images for Keith's BD cake.... ended up... more buys!

I saw DG's posting on her Pomegranate Mooncakes... she was making the chocolate mooncake filling using Richard 老师's mould. I wanted it so much but Richard said he dun have them anymore!!! then I saw this silicon mini-doughnut mould at Ann's Shop and tot it may have the same effect?? anyway its only RM22.00 buy lah!!! buy buy buy :D

U see the coffee-bean chocolate mould? I so love it leh!!! can make chocolate coffee bean for decoration on my cakes... future cakes i mean ;P u won't believe its only RM1.80!! **faint**

That pink color block u see is actually Strawberry Candy melt or Strawberry flavoured compound chocolate. Its cheap! easy to use and it smell quite nice too! but same like any other compound, its taste is very sweet! I use that for dipping cake pops! It has very nice texture and is very easy to work with!

And finally, my long-awaited 恭喜发财cutter had arrived @ Ng Meng Huat! :D

Becoming a SAHM had made me a fan of SimplyHer Magazine... Its a long time since I own a updated issue of HERworld or Harpers Bazzar. Instead, SimplyHer is so much of my everday life of being a "AUNTIE" although i'm a "more-modern" one =P

Nyx love to go thru whatever i'm reading. She was not allowed to watch TV as her punishment last nite for being naughty. So she dug thru my stack of magazines and she found this.... and she wanted me to make her this "PowerBerry Jelly Dessert". What to do?? Being the faithful servant of this household had left me without any choice :(

Starting this blog is rather a good idea to keep a journal of what I had done for the kids. Being a SAHM isn't anything I want or like to do... its so boring. Besides trying to forget my wonderful figure in the corporate world, I have to stay home and be a "AUNTIE". And I have to pretend not to hear those stupid gossips by all the idolts out there! People r thinking I'm just staying home doing nothing while I send my girls to full-day childcare centres or spending away my husband's hard-earn $$ X-( Wonder why people dunno that my husband is earning enough $$ now to give me a more than comfortable life? and why they didn't know that more than 55% of our house morgage is pre-paid and I actually came out half of the amount? Hubby is only paying like 5% from his monthly income to service the remaining morgage! and all from the CPF account, no cash involved!! I'm not sitting around doing nothing.... I think I earned what I'm doing now AT A BIG LOSS some more as I have no more income :(

Ok ok... enough of whining & complaining... I'm just angry with some stupid aunties out there who kept saying that its so "sayang" or wasted of me to quit my good-paying job and stay at home. And some stupid relative who thought that I'm always spending on my hubby's hard-earn $$.

Anyway, I love my blog coz its a showcase of all the nice-nice desserts I made for my gals... ;-)

...and I made 12 PowerBerry Jelly Cuppies!

The look, smell & taste of the berries-berries made me smile :-)

My girls love berries and so do I :-)

Pineapple Tart again!

I know its not Chinese New Year yet.... its a special request from Nyx!

She said I had not make pineapple tart for a long time oredi.... so I made some today ;-)

And I made 103 tarts in total today!
