Wah Heng Beef Noodles

I had my 1st Beef Noodles at Scotts Picnic Food court 24yrs ago, when i was 13yrs old. It was the best food ever for me for a very long time. The building is gone and a new building stands there now. Recipes around and my taste bud had changed...

I dunno when was the last time i ate beef noodles in SG... although i swear quit eating beef in SG liao :P coz beef in sg is not nice anymore. I MISS HKG FOOD!!!!!!

This is nice... but the ones i had before, those in my memories were better!

Crumbly Oatmeal on Banana Oatmeal Muffin

Preheat oven at 180dc.

Ingredients
2 eggs
1 tsp Vanilla Essence
3 tbsp corn oil
4 tbsp sugar
2 tbsp yogurt
mix all at highest speed for 10mins

2 large banana (diced into cubes)
place a few dice at the bottom of each cuppie cups. sprinkle some oatmeal on the banana.

200g plain flour
1 tsp baking powder
1 tsp baking soda
1 tbsp vanilla custard powder
Sift all together
mix in 4 tbsp Quaker's instant oatmeal

Oatmeal Crumble
25g Butter
2 tbsp Plain flour
1/2 tbsp brown sugar
2 tbsp quakers instant oats
Press and mix everything together using a fork till mixture resemble sand. cover well and chill.

Add diced banana into egg mixture, leaving 2 tbsp for topping. Fold in flour into egg mixture using hand. Pour into a piping bag and pipe to fill up muffin cups till 3/4 full. Top each cup with 2-3 diced banana. Fill-up cup with Oat meal Crumble. Bake for 20 mins.

19032012 Lunch: Seashell Pasta with Salmon & Asparagus

Simple & Easy Lunch loved by all at home :D

found a great way to cook asparagus. Just need to wash them, cut off the thicker ends. Cut into 1.5-2 inches. Put half cup of water into a shallow corning ware with a pinch of salt. Put in the asparagus. Spread a few scrape of butter on top of the asparagus. Sprinkle with a little brown sugar. Cover and Steam in microwave for 3 mins. Done!

Strawberry Crumble Baked French Toast

FoodGawker-ing again and was attracted by Butter's Breakfast casserole (Strawberry Baked French Toast). I prepared it in my Pyrex bake-able last nite before bed. Put everything in the oven when I woke up, before washing up. All's done when the girls r ready for breakfast. And YES! All's gone... :D

5 sunshine butter roll (sliced or pinched and placed in baking dish)
3 eggs
1/2 cup milk
1 tbsp sugar
(whisk altogether and pour evenly onto the bread. Seal or cover well and refrigerate overnite)

Crumble Topping
2 tbsp plain flour
1 tbsp brown sugar
25g hard butter
(mix, using a fork to press everything together till the mixture resemble sand, cover well and refrigerate)

Wash and remove the grass from a punnet of strawberries, cut them into small cubes. cover well and refrigerate

When ready to bake, Preheat oven to 180dc. Scatter the strawberries among the egg-soaked bread. Sprinkle the crumble topping evenly over the entire dish. Bake for 40-45mins.

苹果香梨吨鸡汤

我又吨汤了
I ordered a Apple Pear Pork Rib soup from 老火汤, KTPH last nite for dinner. Not bad lah. But i always feel that their 口味太重了for me. Nyx tried a sip and asked if i can cook for her? This is it lor
~ ~ ~ "brewing" in progress ~ ~ ~
Simple Ingredients
2 Apples, cored cut into 10-12 chuncks, skin on
1 香梨 cored and cut into 6 chuncks, skin on
2 Chicken thigh meat, skin and fats removed, cut into 5-6 chunks
12 Red dates
1 hand-full WolfBerries
1/2 tbsp Chicken stock concentrate (no MSG type)

Blench the chicken meat.
Place Apple, Pear and Chicken in slow cooking pot
Boil 2.5 cups water with chicken stock concentrate and pour into slow cooker
Place washed wolfberries and red dates on top of all ingredients and let them float.
Do not stir the pot. Let the slow cooker do the "brewing" for at least 2 hrs.

LOVE this soup!!! ;-)

01032012: BlueBerry Crumble Muffins

FairPrice supermarket selling Blueberries @ only $2.95 a pack. So i bought a pack to "play" :D


Then I searched the web for some Blueberry Muffin ideas... and I saw Wen's Delight's Blueberry Crumble Muffins which made me 流口水 :P~~~

I didn't follow her recipe though... coz my yesterday's Jagong Muffin was very loved by my 2 girls... so Again, I did those with my Secondary School's 武林秘籍 :D with a little modification. Makes 16 Muffins with that Ikea Muffin Pan.

Muffin Ingredients
200g Self Raising Flour
1 tbsp Custard Powder (mine is vanilla flavour de)
120g Unsalted Butter
100g Sugar
2 eggs
1 tsp Vanilla essence
4 tbsp Plain Yogurt (I use Marrigold brand de)
1 pack Fresh BlueBerry (120g)

Crumble Topping (which I copycat from Wen's Delight):
50g Castor sugar
100g Plain flour
50g Salted Butter (cut into small cubes)

Method for topping:
Sift the flour into a bowl, add sugar and butter, then rub with fingertips until the mixture resembles breadcrumbs. Not till it form a dough hor!!! :P Cover well and Chill.

Method for Muffins
Preheat oven @ 180 degress celcius
Mix at highest speed, butter, sugar and egg+ vanilla essence for 10 mins
(meanwhile, can place paper cups in muffin pan, place 3-4 washed and paper-towel dried blueberries at the bottom of each cup)
Add in Yogurt and mix for about 1 minute
Sift in Flour and custard powder
I fold in the flour mixture with my hand (again)!!! :D LOLOLOLLL.... :))) hahahaa...
Add in half the remainder of the blueberries into the cake mixture. Don't crush them.
I pour the cake mixture into a piping bag and fill up each cup till 3/4 full.
Place 3-4 blueberries on each of the cup till you use up all the remaining blueberries.
Lastly, top each cup mixture with a few pinch of the crumble.

Bake for 20 minutes. Switch to top heat and bake for further 5 mins.

Cool in pan for at least 10mins before taking them out of the muffin pan. Make sure the muffins r completely cooled before u store them in a air-tight container.

29022012 Breakfast: Sweet Corn aka Jagong Muffins

Did this before I go to bed last nite... for my gals' Breakfast this morning.
~~~ Sweet Corn Muffins ~~~
Smells so Yummilicious Good when it's fresh out from the OVEN!!! :D
As a mum, This is the most SATISFYING moment :D hehee...
~ ~ ~ Back to Basic ~ ~ ~

I did this with my Secondary School's 武林秘籍 :D with a little modification. Makes 12 Muffins with that Ikea Muffin Pan.

180g Self Raising Flour
1 tbsp Custard Powder (mine is vanilla flavour de)
120g Unsalted Butter
100g Sugar
2 eggs
1 tsp Vanilla essence
4 tbsp Cream Corn (those from can)

Preheat oven @ 180 degress celcius
Mix at highest speed, butter, sugar and egg+ vanilla essence for 10 mins
(meanwhile, can place paper cups in muffin pan)
Add in cream corn and mix for about 1 minute
Sift in Flour and custard powder
(Then suddenly I remember my CC cake instructor, Richard Goh)
I fold in the flour mixture with my hand lor!!! :D LOLOLOLLL.... :))) hahahaa...
I pour the cake mixture into a piping bag and fill up each cup till 3/4 full.
Lastly, top each cup mixture with a tsp scoop of cream corn

Bake for 20 minutes. Switch to top heat and bake for further 5 mins.

Cool in pan for at least 10mins before taking them out of the muffin pan. Make sure the muffins r completely cooled before u store them in a air-tight container.

Before I serve, I will reheat in microwave for 8 seconds. Yummmmmy!!! :D

27022012 Dinner

Watercress Soup in the making...
Watercress, Dried Silverfish, Red Dates, Wolf berries, Pork Balls with mushroom Plus, sunk to the bottom of my slow-cooking pot is the flesh of 1 sweet corncob and 2 carrots, diced into 2cm cubes. I will boil 2.5 cups of water with the corn flesh and carrot 1st. Pour into the slow cooker set @ high. Put in the rest of the ingredients and let the pot do the rest of the job for at least 1.5hrs. NO ADDITIONAL SALT OR ANY OTHER SEASONING IS REQUIRED!!!

Steamed 7-Up Pandan CupCakes

I was laughing out so much watching Dr Jiajia's Singlish 17. Inspired by Dr Jiajia's "I Kiwi, not Kway Neng" video, I steamed some green kway neng goh for my gals today :D Hehee...

I browsed the web for some simple recipe and came across DG's blog. I did a little modification coz i'm making Pandan version instead of Matcha.

Ingredients
4 Eggs
1/2 cups Caster sugar
1.5 cups Self-raising flour
1 tsp Pandan Paste
50ml 7-Up or Sprite

Method:-
Use high speed beat eggs till fluffy, add in sugar and beat till soft peak
Add in Pandan Paste till no "marble-effect"
Fold in Flour till well-combined
Add in 7-up till well-mixed
Pour into cups/moulds
Steam for 15mins

My little Tessa is Dyslexic... But its seriously very frustrating that there is so little awareness HERE in Singapore! Its surprising to ALL that Our very important and famous ex-Prime Minister, Mr Lee Kuan Yew was dyslexic too!!!! but I wonder WHY is this not known to almost everybody in this region?

22022011: Dinner

Tessa has lesson 5.30-6.30pm. meaning, I've no time to cook dinner =P. nvm... i can still cook 1 dish. the rest just tapao lor :D

Only the Steamed Egg is by me. The rest r Tapao.

CrabSticks Steamed Egg (My version of Chawanmushi)
2 Eggs
100g CrabSticks Bits
7 "star face" fish cake
1/2 tbsp light soya sauce
1 tsp sugar
1/2 tsp chicken stock concentrate
100ml water

whisk everything except crabstick and fishcake, together till combined. Pour mixture into a deep cassorole.(corning ware for me)

add in crabstick bits. make sure they r defrosted and not lumped together.

Microwave with "steam fish" function 2x. Place the star fishcakes on top of steamed egg. Make sure cover is placed on cassorole firmly. 70% power of my 1000w for 1 minute.

Done!

I love the almost tofu texture and best part, my 2 gals love it too!

Easy... getting easier =P except the preparation time is long...

i marinated the wings the nite b4. Oven -grilling time took an hour. but i dun have to watch them at all! ;-)

Porridge is cooked in my "intelligent" cooker. Took an hour as well lor ;-) same thing, no need to watch :D. Just let the equipments do the job, while i DIY my slippers =D

Baked Banana French Toast (Bakarella Inspired)

This is seriously Yummy-licious!!!!! Smells great, Taste Wonderful and Super easy to make!!! Thanks to my 偶像, Bakarella the Genius! ;-)

With or Without snow.... which do u prefer? ;-)

Below is my modification to Bakerella's original recipe...

Baked Banana French Toast

2 Sunshine/Gardinia Butter Roll
2 eggs
1/4 cup milk
1 tablespoon sugar
1 large banana
1 tablespoon light brown sugar
1 tablespoon butter
some lemon juice
Snow Powder
2 CupCake Cups

Cut each butter roll into 3 slices. Make sure 1 roll will fit in each cup easily.
In a large bowl, whisk together eggs, milk, sugar, until blended.
Place sliced bread in bowl to coat.
Place three slices of bread into each cup.
Cut banana into 10 or more slices. Coat slices with mixture and then dip coated bananas in lemon juice and stuff in between bread.
Place the cups in a bakable dish, keep in a zip-lock bag and chill in the refrigerator for at least an hour or overnight.
When you are ready to bake, mix together 1 tablespoons brown sugar and 1 tablespoon butter and sprinkle over bread.
Bake in a preheated 180 degree celcius oven for 30-35 minutes.
Enjoy warm with snow powder. ( actually, I prefer without :P )
